Abstract

Toxicology is essential knowledge in analyzing the risks to human health associated with exposure to chemical substances present in food. This article will address the importance of toxicology in food health, presenting the main sources of contamination, the toxic effects of these substances on the human body, and methods of prevention and risk reduction. The review of recent research clarifies the need for continuous monitoring and public policies to ensure safe food for the population.
