BUSINESS STRATEGIES FOR FOOD TRUCKS USING THE CANVAS TOOL

Abstract

The study explores the idea of entrepreneurship through food truck operation models specialized in oriental cuisine, focusing on geek events, a growing market in Brazil. Using the Business Model Canvas, essential components such as value proposition, distribution channels, and strategic partnerships were mapped. The methodology included a qualitative analysis, a literature review on sector trends, and practical simulations of the "Samurai Móvel" model at events. The Elevator Pitch technique was used to validate the value proposition and attract investors. It was concluded that the model is viable, with low initial costs and great potential for expansion, meeting the demand for quick and healthy food.
